Experimental Analysis of Drying Conditions’ Effect on the Drying Kinetics and Moisture Desorption Isotherms at Several Temperatures on Food Materials: Corn Case Study

This work studied the effect of external conditions on drying kinetics a thin layer corn during convective drying. The density and specific volume grain were reported desorption isotherms determined at three temperatures for water activity from 0.1 to 0.9 using static gravimetric method. Initially, about 7 mm thick with an initial moisture content 45% (d.b) was investigated, tested. Afterwards, comparison between experimental packed bed performed under same conditions. Finally, values equilibrium contents, activities obtained fitted seven sorption models. It found that data exhibited type II behavior, according Brunauer’s classification. GAB model as most suitable semi-empirical which well suited represent kernels in suggested ranges temperature activity. can be concluded entropy–enthalpy compensation theory process is controlled by enthalpy mechanism.
